Turkish food is so in at the moment and so why not try your hand at some homemade shish kebabs. They couldn't be simpler and take no longer then 30mins. Serve them up on some lovely warm flatbreads, yoghurt dip and an authentic Turkish salad and you'll be wishing it was kebab night every night!!
Prep time 10mins
Cooking time 10-15mins
1 red pepper, cored and roughly chopped
1red onion , roughly chopped
4 garlic cloves
1 red chilli, roughly chopped, remove seeds if you prefer it a bit milder
Small handful of fresh parsley
1tsp salt
1tsp black pepper
2tsp paprika
1tsp sumac, alternatively use the zest of one lemon
500g lamb or beef mince
1tbsp olive oil
Place all of the ingredients except the mince and olive oil in a food processor and pulse until you create almost a paste. If you don't have a food processor then take the time to dice the ingredients as finely as you can, this will make sure that all the ingredients cook in the same time as the mince.
Thoroughly mix the paste with the mince.
Turn the grill on to a medium heat.
Using metal skewers mould the kebab mixture around it, brush each kebab with a little olive oil and place them under the grill, turning ever now and again for 10mins until they are nicely cooked through.
Be careful when you turn the skewers because if you use metal ones they will get hot, if using wooden skewers be sure to soak them in water for 10 mins so they don't burn or set alight under the grill.
If you don't have skewers just mould the mixture into sausage shapes.
These are best cooked on an open flame so if you get the chance, chuck them on the bbq next time the suns out!!
