Roasted Tomato & Tortellini Soup

This deliciously simple roasted tomato and tortellini soup recipe will warm you up during those chillier months of the year. This recipe will serve 3 portions or 2 very generous bowls, it depends whether you want to share! 😊 at around £1.80 per head including the filled pasta this recipe is a great all rounder.

Ingredients

800g mixed tomatoes, larger ones cut in half

1 red onion, peeled & cut in to wedges

1 garlic bulb, top sliced off (see video)

2tbsp olive oil

Salt and pepper

500ml veg stock

30g fresh basil

Dash of double cream

1/4tsp dried chilli flakes, optional

250g ready to cook tortellini

Method

Preheat your oven to 180ºc fan.

Line a baking tray with parchment or baking paper, this will save all the lovely juices from the tomatoes instead of the sticking and evaporating on the metal tray.

Add your tomatoes, red onion wedges and garlic bulb to the tray and then drizzle with the olive oil. Season them generously with salt and pepper. Wrap the garlic bulb in tin foil, place back on the tray and pop in the oven for around 30-40mins until everything is beautifully roasted.

Remove from the oven.

Carefully unwrap your garlic bulb and set aside to cool slightly.

While its cooling add the roasted tomatoes and onion to a large saucepan, pouring in any juices from the tray.

Now add the stock, 20g of fresh basil (save 10g ish for garnish at the end) and when its cool enough to handle squeeze the roasted garlic from its skin and into the pan.

Let it bubble away on a medium to high heat for about 8 minutes until all the flavours have had a chance to get to know each other and the soup has reduced slightly.

Next carefully (leave to cool slightly if you can) use a stick blender to blend the soup until smooth, being extra careful of any hot liquid splashing out.

Now add a dash of cream, around 50ml and have a taste. Adjust the salt and pepper and add chilli flakes if you are using. You can also add a dash more hot water if the soup is too thick. (see video for reference)

Once you're happy with the flavour put back on the hob on a medium heat and add the ready made tortellini, cook in the soup according to the package instructions (I like to add and extra minute of cooking).

Dish up and garnish with some fresh pepper, chilli flakes and the left over basil that you have finely sliced.
