

Mexican Pork Albóndigas, which are basically really delicious juicy meatballs in a Mexican inspired brothy sauce.Across my new youtube series I'm going to be showing lots of easy homecooked recipes using sausages in all kinds of ways, after all sausages are budget friendly, so versatile and lets not forget, really delicious.
Cook time 3.5 hours (if slow cooking, can be made within 1 hour on the hob)


For the meatballs..
8 pork sausages, spicy for a bit of heat if you like. Skins removed.
1 egg60g uncooked long grain rice
Salt & pepper
30g fresh chopped mint (use 1/3rd for the meatballs save the rest for later)
30 fresh chopped coriander (use 1/3rd for the meatballs save the rest for later)
For the rest of the dish..
1tbsp olive oil
1 onion, peeled & diced
2 celery stick, diced
1tbsp tomato paste
4 garlic cloves, crushed
1tbsp dried oregano
1tbsp ground cumin
1tsp smoked paprika, spicy or plain
175ml pasatta
3medium potatoes, peeled, diced in to inch cubes, approx
1 courgette, diced in to 1 inch pieces, roughly
125g green beans, trimmed and cut in half
500ml beef stock
Juice of 1 lime

Prepare the meatballs by mixing all the meatball ingredients in a bowl (don’t forget to save some of the fresh cut herbs for later) form in to meatballs just bit smaller then golf balls and set aside in the fridge.
If slowcooking, you can just bung everything in your slow cooker and hit go but it’s nice to brown stuff off a little bit if you can.
You may have a browning function on your slow cooker, if not use a saucepan on the hob and then transfer to your slowcooker..
Heat 1tbsp of oil on a medium to high heat and add the onion and celery cook gently for around 10mins or until it has begun to soften.
Next add the tomato paste and crushed garlic, cook gently for 3mins until fragrant.
Now add in the oregano, cumin and paprika and just a splash of water so the pan doesn’t dry up and burn the dried spices. Cook for a few mins until fragrant.
Next add all of the other ingredients, using only half of the lime juice and HALF of the remaining chopped herbs, save the rest for dishing up, pop the meatballs in and set to cook low and slow for 3hours. Or on high setting for 2hours.
After the cooking time make sure the meatballs are fully cooked through and dish up using the remaining lime juice and herbs to garnish.
