Jerk Pineapple Rice

Bored of the same old rice, try this recipe for a sweet and spicy change up from the norm. Its an absolutely glorious side dish to any bbq'd meat, and with the summer months coming what better time to try it out!!

I used a pre-made jerk seasoning from Peak Blends which was delicious.


Serves 2

Prep time 10 mins

Cook time 10 mins


Ingredients

Half a pineapple, scoop out the flesh and chop into small chunks.

1 red pepper, diced

1 small onion, diced

175g of precooked and cooled rice, or packet microwaveable rice

1tbsp jerk seasoning (more if you like extra spice)

Pinch of salt to taste

1tbsp olive oil

1tbsp chopped coriander, to serve



Method

Heat the oil in a pan and gently sauté the onion and pepper for a few minutes.

Add the spice blend and cook for 2 mins adding a splash of water if the pan is to dry.

Once the spices are nicely cooked add the rice and mix in well, turn the heat up a little and make sure the rice is throughly cooked through.

Once the rice is heated stir through the pineapple pieces, cook for a further minute, taste and add a bit of salt if required.

Serve either in a bowl or in the empty pineapple shell for some extra WOW factor!!
