Immune Boosting Spring Soup

Don't you just love meals that fill you up but you know everything you ate was good for you! My immune boosting spring soup will leave you feeling satisfied and boosted at the same time. Full of lots of immune boosting ingredients and vitamin packed veg this is great recipe for the whole family to enjoy... and not just in spring, any time of the year!

Ingredients

2tbsp olive oil

1 large onion, diced

3 celery stalks, sliced

4 garlic gloves, minced

1 small broccoli, including stalk, roughly chopped (peel and discard tough skin from stalk before chopping)

1 large potato, peeled and cut in to 2cm cubes

500ml chicken or veg stock

150g frozen peas

3tbsp chopped fresh parsley

2tbsp fresh dill, roughly chopped

125g (approx) of fresh spinach roughly chopped

150ml crème fraiche 

Garnish of your choice, tortellini or raviolis are a nice added extra.

Method

In a large saucepan add the oil and heat on medium. 

Once heated add the onion, celery and garlic and cook for 10mins until slightly softened.

Now add broccoli, potato and stock to the sauce pan and cook until the potato and broccoli are tender.

Turn the heat off and add the peas, parsley, dill and spinach and allow it all to wilt in the heat. Use a stick blender to blitz the soup until as smooth as possible, add some more stock if it’s too thick.

If you’re using a blender like me allow the mixture to cool to warm before blending other wise you might get covered in hot soup mixture!

Once you have your desired consistency add the crème fraiche and mix thoroughly, have a taste and add more salt and pepper if required.

Serve in bowls and top with your garnishes, I like to add a drizzle of EVOO, fresh pepper, chilli flakes and cooked stuff pasta.
