

One of the best British classic meals.. and it happens to be my last meal on earth choice, Toad in the Hole, named so apparently back in the day because the meat chunks, it wasn't always cooked with sausages, sitting in the Yorkshire puddings looked like little toads poking out or their burrows.. apparently though this hasn't been verified 馃槄

Cook time around 1 hour


4-6 pork sausages (depending on appetite)
Veg oil (or olive oil is fine) enough to fill the bottom of your chosen oven dish by a depth or around 5ml.
2 large eggs
Plain flour
Milk, whole or semi is fine
Salt & Pepper

Find yourself a dish for your toad in the hole, glass dishes like pyrex work well, obviously you need to make it size appropriate depending on how many sausages you are cooking. For 6 sausages a 10" by 10" dish works well.
Place your sausages in and pour oil in the dish to around 5ml depth.Pop this in the oven and then turn the oven on to 195潞c fan, while the oven and oil with the sausages are heating up make your Yorkshire pudding mix.
Grab a mug and a mixing jug... crack the two eggs in to the mug and then transfer in to the mixing jug, although it seems pointless don't skip this part.
Next add the plain flour to the mug that the eggs were cracked in to, fill the cup with flour to the same point the eggs cam up to.. you can use the egg residue left in the mug as an indicator (see video for visual) once at the same level as the eggs were pour in to the measuring jug with the eggs.
Repeat the process with the milk, pouring in to the mug to the same level as the flour and eggs came up to, now transfer to the measuring jug with the other ingredients.
Add a good pinch of salt and pepper to the mixture and then give a good whisk, set aside for 10 mins.
Be very quick but very careful at this next stage... once your oil is very hot and up to temperature, as quickly as you can safely do, remove from the oven (close the oven door behind you to keep the heat in) and then pour the Yorkshire pudding mix in to the dish.
Put back in the oven as quickly as possible and now do not open the oven until they're cooked, this should take around 45mins.
Once you can see the Yorkshire pudding is cooked, risen and golden and the sausages are nicely brown and cooked remove and dish up with mash, veg and greens.
Key recipe tips for epic Yorkshire puddings... make sure you have equal volumes of eggs, milk and flour always measuring eggs first.Make sure the oil is very hot before adding the mixture.Never open the oven before its cooked or it will go flat as a pancake.
