Easy Chocolate Mousse

Did someone say 2 ingredient dessert? Fancy impressing your dinner party guests with the easiest dessert you'll ever come across, then this is the recipe. Perfectly set in either a nice glass or like in my picture as an Easter treat, this will be your new go to dessert!

FYI As this recipe has the use of raw eggs its best to use egg with the lion mark on the shell, raw eggs are sometimes deemed not safe for vulnerable people such as pregnant women, children and some elderly. If you prefer you can use whipped heavy cream instead of the eggs

Ingredients

170g milk chocolate

3 free range eggs lion marked eggs, separated, alternitvely if you're not comfortable using raw eggs replace with 300g of heavy whipping cream

2tbsp preferred alcohol like amaretto or cointreau (optional)

Method

Place the chocolate in a large heatproof bowl sat over a saucepan of gently simmering water, making sure the water does not touch the bowl. Allow the chocolate to melt and then leave to cool slightly. If using mix the amaretto into the melted chocolate and add the egg yolks. Whisk together to combine.

In a separate large bowl, whisk the egg whites, or heavy cream if you're replacing the egg, using an electric hand whisk until the eggs (or cream) form firm peaks. Stir 1 tablespoon of egg white (or cream) into the chocolate mixture and stir to combine. Then carefully fold the rest into the chocolate mixture, using a large metal spoon and being careful not to knock out too much air. Divide the mixture between  tumblers or easter egg halves, pop in to the fridge to chill for at least 4 hours.

To serve top with anything sweet treats you like, crushed caramelised biscuits and fresh fruit go very well.
