Christmas Koftas

Light up your friends and families faces with these super cute Xmas canapés. They look like sweet mini Christmas puddings but in reality they are savoury kofta meatballs. Each mouthful gives a punch of Middle Eastern flavour that will impress all your party guests.

Ingredients

450g beef mince

1 onion, grated

2 garlic cloves, grated

2tsp ground cumin

2tsp ground coriander

1/2tsp salt and pepper

1/2tsp turmeric

1/2tsp ground cinnamon

1tsp paprika

2tbsp olive oil

75g natural yoghurt

2tbsp lemon juice

Small pinch of salt

To Garnish

Pomegranate seeds

Parsley leaves

Method

If using the oven pre heat to oven to 180c fan.

In a bowl add the beef mince, grated onion, garlic, cumin, coriander, salt, pepper, turmeric, cinnamon and paprika and mix well to combine.

Form the mince into balls about the size of golf balls, you should be able to make at least 12.

In a frying pan add the olive oil and turn the heat to high. Place the balls in and brown them all over on the outside, you can do this in batches if need be.

Once browned but not cooked through either place them straight in to the air fryer for 7mins at 180ºc or if using the oven place them on a baking tray and pop in the oven for 10mins, or until they are cooked through.

While they are in the air fryer or oven, combine the yoghurt, lemon juice and salt and mix well.

Once the balls are cooked through place them on a piece of kitchen towel to drain any excess oil and allow them to cook enough to handle and place a tsp of the yoghurt mixture on the top of them followed by a couple of pomegranate seeds and a couple of parsley leaves (see the picture)

There you have some fun and tasty Xmas canapes.
